Ok. So let's start, but beware in my opinions many food can be 'taste tested' before shabbos and eaten as leftovers, but have to be 'made for Shabbos:

In no particular order

Chicken soup- Shabbos
Chulent - Shabbos
Deli roll - Either
Gefilte fish - shabbos
Salmon - either
Salad - either
Potato Kugel - Shabbos
Cranberry kugel - shabbos
chili - weekday
pizza - weekday
Tuna fish - Shalosh seudos or weekday
Egg salad - Either
whitefish - weekday
Any parve kugel - shabbos
Milchig noodle kugel - weekday
Any other soup, besides chicken - either (probably more weekday-ish, but can get away with shabbos)
Roast - Either
Chicken - Either
Shnitzel - Either
Shnitzel Pie - Shabbos
Milchig mains - weekday
Stir fry - either

Well, that's a start - now you can continue. (I am actually working and trying to do this at same time so probably missed a bunch of foods.)

ETA:
Rice - either, but should be a little 'fancier' if for shabbos
Orzo - either
Mashed potatoes - either, but should be a little 'fancier' for Shabbos
Burritos - weekday
Sloppy joe - weekday
Pastrami/onions - was weekday until bf and other convinced me to make it for Shabbos and now it's Shabbos (or week leftovers)
Stew - weekday

hamburger - weekday
falafel, even in a plate and not in a pita - weekday

Here salmon is also pretty costly but people definitely make it for dinner. In fact, someone told me that is her 'wednesday night' dinner. I don't make it usually, though.

Yeah, but I remember the days that I used to get it at Cosco for a couple of dollars a fillet. Here on sale it's still a fortune.

it's kind of funny that melech classified it as shabbos food, since it's the porkiest of pork-filled bowls of stew ever, and likely to have like a big pig's foot sticking out of your bowl, or an ear or something.
