How long can you continue to use a jar of pasta sauce that has been opened but refrigerated? Is two weeks still ok?

If its been sealed, sure. Mine lasts at least that long -I dont use up one jar per use.

Sealed, meaning with the lid on, but it was previously opened, right? I believe that my mother only saves them in the fridge for a week and then throws it out if the remainder hasn't been used. How long do you save them for?

Right with a lid (not a can sauce)
ummm, I leave it in until I finish it! however long it takes! As long as there is nothing fuzzy growing on it or it doesnt smell weird, I dont think its a problem.

I used a pasta sauce the other day that was 2 weeks old and no problems at all.

That's more my style for determining whether something is still good, but I always had it rammed into my head by my mother that tomato sauce in a jar is only good for one week, and must be frozen into portion-size baggies after then.

Funny, I was just debating this tonight myself. We made matzah pizza (only 2 boxes left to go!) and only used the tiniest splash of sauce...I think I'm going to freeze it, because we never seem to use it fast enough for me to 'trust' that it's ok...not freezing in the original container of course, will put it in a freezer bag/jar/somesuch.

You're mom's neurotic. I keep sauce for a few weeks. I have a really cold refrigerator and keep the lid on.

Not sure about that one; if a sauce isn't good any more for using fresh, what's the point of freezing it? You'd be better freezing it straight away and then taking out what you need when you need it.

they talked about this on the today show a couple of days ago. apparently, once the jar's open, you have about a week.

The jar claims 1 week after opened. I keep it in the very back where it's coldest anyway.

I guess sometimes my Mom actually does know what she's talking about...
