my wife is trying out a recipe for pesachdik (non-gebrokts even though we officially eat gebrokts but don't buy matzoh meal, and so can hardly be bothered to make our own) kneidlach from potato starch... they're not bad, more like dumplings

pesach rolls
gefilte fish (from a frozen gefilte fish roll)
salad + dressing
quinoa tabouli
cashew and mushroom roast
zucchini pancakes
genoise, ganache
brownies (for kiddush at shul)
-- Pesach Rolls (makes 18)
boil
1.5 c water
3/4 c oil (you can use any oil, including olive)
add to
1.5 c meal
1.5 c cake
1/2 T salt
1.5 T sugar
add, one at a time
6 eggs
let sit 15', shape with oily hands
50', 375 degrees
-- Yogurt dressing (3 c)
Blend until creamy
2 c yogurt
6 T oil
2 T vinegar
tarragon (it doesn't say how much, I guessed)
4 t chopped parsley
4 T grated onion
1/4 t oregano
1 t salt
1/2 t garlic powder
1/4 t white pepper
Refrigerate in airtight jar
-- Quinoa Tabouli
rinse several times, rubbing grains together
1 cup quinoa
boil in
2 cups water
simmer, cover, 10-15', until water absorbed
while cooking, chop finely
3 medium ripe tomatoes
2 tablespoons fresh mint
1 1/2 cups parsley
1 cup scallion
add
1/2 cup fresh lemon juice
1/3 cup olive oil
stir in quinoa and
salt, to taste
-- Cashew and Mushroom Roast
boil
3 med potatos
mash with
butter
fry
1 T oil
1 small onion, finely chopped
2 cloves garlic, crushed
grind
225 g cashew
add to potato
matza meal to bind
1 egg
1 t fresh rosemary
1 t fresh thyme
150 ml vegetable stock
S+P
add onion
saute
225 g mushroom, chopped
half of nut mixture, mushrooms, rest of nuts
cover with foil, 1 hr 400F
(I ran out of time, so instead of that, I took the potatos, mashed them, added salt, pepper, and grated cheddar, put them in a dish, and heated it on the plata at lunch. I fried the mushrooms right before the meal in olive oil with onions, and when they were done I added a bit of salt, pepper, and balsamic vinegar)
-- zucchini pancakes
grate coarse, add 2t salt, sit in strainer 15', press out water
1 kg small zucchini
fry transparent
1/4 c olive oil
3 cloves garlic, chopped fine
1 large onion, chapped fine
mix with
1 c parsley, chopped fine
2 stalks thyme, leaves
2 T parmesan, grated
2-3 eggs (add the third if needed)
4 T crumbs or matzo meal
S+P
shape small pancakes, dip in crumbs and fry in 1/2 cm olive oil
The title of this recipe said "zucchini and pine nuts" and I had already bought some, so I grated them in the food processor and used them instead of the matzo meal. There were 100 grams which made more than 4T. I tried frying them without dipping them in crumbs, but they didn't stay together, so after forming each pancake I dropped it into a bowl of matzo meal, scooped some over the top, and put it into the hot oil.

A genoise is usually made with flour. I found somewhere a suggestion to replace the flour with a mixture of ground almonds and cocoa. I threw them into the food processor together and ground them until the almonds were very fine. It's usually brushed with a sugar syrup but I didn't have time.
9" springform pan, preheat oven to 350F
warm to 110F
3 T clarified butter (would probably work with oil, too)
add, cover to keep warm
1 t vanilla
whisk
4 eggs
1/2 c sugar
beat over simmering water to lukewarm, whisking
take off heat, beat 5-10' until quadrupled
whisk 1c of eggs into butter
dust half of flour over rest of eggs and fold nearly all of it
repeat and fold completely
1/2 c almond flour
1/2 c cocoa
fold in butter mixture
20-30', instructions say to unmold at once but I was busy, and nothing bad happened.
I sliced into two layers, left one at the bottom of the reassembled springform, spread the first ganache, put the second layer back, and topped with the second ganache.
-- Light Whipped Ganache (4 c, two 9" layers)
Almost melt, stir to melt.
112g chocolate
1/3 c cream
Set aside till no longer warm.
Beat till beater marks show.
2/3 c cream
1/4 t vanilla
Add chocolate and beat to soft peaks.
-- Dark Ganache
melt in food processor. Heat for 30", stir, repeat until melted. Whisk until smooth
1 c cream
1 lb chocolate
-- brownies
I found paper baking trays that were large enough for to hold two of this recipe but the recipe calls for a 9" square pan
mix
2 cups granulated or brown sugar (I used light brown)
2 sticks butter, melted and cooled
add
3 eggs
1 tablespoon brewed coffee (I just threw some instant coffee powder in)
3/4 cup unsweetened cocoa powder, sifted
1/4 teaspoon salt
1 scant cup matzoh cake meal
1/2 cup finely chopped toasted walnuts (optional)
25' 350,
should be set and seem dry to the touch, but no crust around sides
I put pecans in one pan and marbled marshmallow spread into the other.
Purple is indeed very important
