-Sweet potato soup- (dairy)

Prep Time: 10 mins
Cook Time: 1 hour

Ingredients:

1 onion
1 shallot (optional)
2 sweet potatoes
2 carrots
3 cups pareve stock (I use water mixed with consomme)
1 cup milk
ginger powder, nutmeg, cinnamon, red pepper, salt, pepper
Worcestershire sauce

Directions:

Sautee the onion until transluscent. Add all the spices while it sautees.
Add the chicken stock and a couple tablespoons of worchestershire sauce, bring it to a boil and add the carrots and sweet potato. Let it simmer for about an hour or until the carrots and potatoes are soft. Add the milk, let simmer a little while longer.
Put into a blender or use an immersion blender and blend until smooth.

Note: I like to serve it w/ some mozzarella cheese mixed in.

-Bean and Barley Soup- (Parve)

Prep Time: 25 minutes
Cook Time: 15 minutes

Ingredients:
2 onions
1 shallot (optional)
1 can kidney beans (drained of liquid)
1 can black beans (drained of liquid)
1/2 cup barley
1 14.5 oz. can diced tomatoes (with liquid)
1/2 bag frozen soup vegetables (or mixed veggies)
4 cups water with chicken soup mix or chicken broth
several squirts of tablespoons worchestershire sauce
Garlic salt
Italian seasoning

Directions:
Dice the onions and shallot and sautee until translucent.
Add 4 cups of water mixed with chicken consoumme or chicken stock.
Bring to a boil and then add the barley and spices. Cover pot and let simmer until barley is tender/around 15-20 minutes.

Put half a can of black beans and half a can of kidney beans into a food processor until completely mashed.

Add the mashed beans, whole beans, tomato, worchestershire sauce, and frozen veggies to the pot and mix well, cover pot and let simmer for 15 minutes.

-Mushroom Barley Soup- (Parve)

Prep Time: 20 minutes
Cook Time: 2-3 hours

Ingredients:
1 onion, chopped
1 stalk celery, diced
1 clove garlic, minced
1/2 lb. fresh mushrooms, sliced
2 Tbsp. oil
1/4 cup soy sauce
1/2 cup hulled barley
1/2 tsp. salt
1/2 tsp. garlic powder
1 tsp. chopped fresh parsley
5 C water
1-2 carrots

Directions:
In a large pot, combine onion, celery, garlic, and mushrooms with oil and sautÚ for 5 minutes. Add barley, soy sauce, seasonings, and water. Bring to a boil, and simmer for 2 to 3 hours. About 45 minutes before it's done, add the chopped carrots.

-KBD Kids' Cauliflower Soup- (Flieshig/Milchig/Parve)

Prep Time: 15 minutes
cook Time: 30 minutes

Ingredients:
1 small onion
1 clove garlic
1 shallot
1 small potato
4 Tbsp margarine
6 oz (approximately 4 C) broccoli florets
6 oz (approximately 4 C) cauliflower florets
4 cups vegetable/chicken broth
1/2 cup light cream/soymilk

Directions:
Chop onion and garlic, slice shallot into thin rings
Peel potato, cut into chunks
Put marg into pot (med heat)
Add onion, garlic, shallot. cook for 6 minutes.
Add potato, broccoli, and cauliflower
Add broth
Cover and cook about 30 min (until vegetables are soft)
Turn off heat, add soymilk, blend with immersion blender
Add salt to taste

-Vegetable Soup- (Parve)

Prep Time: 15 minutes
cook Time: 45-60 minutes

Ingredients:
2 onions
8 C water
4 potatoes
4 carrots
4 zucchini
4 tsp salt
4 tsp chicken soup powder

Directions:
Saute the onions.

Chop the potatoes, carrots and zucchini.

Put all ingredients in a pot. Bring to a boil. Simmer for 45-60 minutes. Puree if kids don't want to see the vegetables.

-Bean Soup- (Parve)

Prep Time: 15 minutes
Cook Time: 1+ hour

Ingredients:
1 onion, quartered
6 C water
1/2 C dry red wine
1/4 C balsamic vinegar
1 (14 1/2 ounce) can chopped tomatoes, chopped or 2 tomatoes, chopped
1 (29 ounce) can white beans, like canelini
1 (15 ounce) can red kidney beans, not drained
30 baby carrots
10 baby zucchini (optional)
2 teaspoons vegetable soup mix
1-2 frozen crushed garlic clove, minced or 2 garlic cloves, minced
1 tsp dried oregano
1 Tbsp salt
1/2 tsp course black pepper
Barley

Directions:
Place all ingredients in 6 quart pot.
Cover and bring to boil.
Reduce to simmer and cook for over an hour +
Ladle into bowls and serve!

[Comments:]I diced and sauteed the onion. I used Marsala wine.
I used shredded carrots.

Didn't put in zucchini.

Used chicken soup powder instead of vegetable soup mix

-Cheapskate Tomato Soup- (Milchig)

Prep Time:
Cook Time:

Ingredients:
6 oz. tomato paste in can
1 tsp. salt
1 tsp. celery seed
24 oz. milk - refill tomato paste can four times

Directions:
Put tomato paste in small saucepan. Add milk, salt, celery salt. Cook on medium heat, stirring occasionally.

-Chili- (Flieshigs)

Prep Time: 20 minutes
Cook Time: 1 hour

Ingredients:
1 pound ground beef
2 cloves garlic, minced
1 large onion, chopped
2 Tbsp chili powder
1 tsp dried oregano
1 tsp ground cumin
1 tsp hot pepper sauce
1 (28 ounce) can crushed tomatoes
1/4 C red wine vinegar

DIRECTIONS
Crumble the ground beef into a stock pot or large Dutch oven over medium-high heat. Add the onion and garlic, and cook stirring frequently until beef is evenly browned. Drain off excess grease.

Season with chili powder, oregano, cumin and hot sauce. Stir in the tomatoes and vinegar. Bring to a boil, then reduce heat to low, and simmer for about 1 hour - or longer if you have time. Stir occasionally to prevent burning on the bottom.

It's essentially a basic chili recipe without the beans. It does look more like sloppy joes, and has a thick consistency (when I made bean-less chili for my mother, I always used to boil some spaghetti for myself and then top it with the chili, cincinnati-style).

-Cabbage Soup- (Parve)

Prep Time: 3 minutes
Cook Time: 45 minutes

Ingredients:
1 bag of cabbage
9 C of water
3 Tbsp of beef soup mix
Few drops of Tabasco sauce
1 can of diced tomatoes

Directions:
Place all ingredients in a pot and simmer for 45 minutes.

Cook Time: 1 1/2-2 hours

Ingredients:
1 onion, diced
2/3 C barley
1/2 lb mushrooms (about 1/2 a can)
1 stalk sliced celery
2 Tbsp flour
1 carrot, sliced (or shredded)
8 C water
Salt
Seasoned salt
Pepper, to taste
1 tsp beef flavored soup powder
Dill
1 bay leaf

Directions:
Saute onion and mushrooms until golden. Add flour and stir. Add water and rest of ingredients. Bring to a boil and simmer for 1 1/2 -2 hours.

-Zucchini Soup- (Treife?!?)

Prep Time:
Cook Time:

Ingredients:
2 Tbsp margarine
2 onions, chopped
2 potatoes, peeled and diced
8 zucchinis, chopped
1/4 tsp dried thyme
1/4 tsp dried rosemary
1/2 tsp dried basil
1/4 tsp ground white pepper
4 C chicken broth
1 C whole milk

1/4 C dry potato flakes
1 Tbsp soy sauce
4 Tbsp chopped fresh dill weed

Directions:
In a large frying pan, melt butter or margarine; add onion and saute until translucent. Add diced potato, zucchini, thyme, rosemary, basil, and white pepper, and cook for 5 minutes.
In a medium-sized cooking pot, add broth and bring to boil. Add zucchini/potato mixture; reduce heat and simmer about 15 minutes.
When cooked, puree in food processor or blender in batches. Return to cooking pot, add milk and bring just to boil, but do not boil. Add instant mashed potato flakes and soy sauce and stir well. Adjust seasonings to taste. Garnish with dill weed. Soup may be served hot or chilled.

I just made this soup from allrecipes.com

I made the soup all in one pot. Instead of sauteeing everything in a skillet and then transferring, I sauteed the onions, potatoes, and zucchinis in a large pot, and then added the milk and water (with chicken soup flavoring) to the mixture. I used an immersion blender instead of a food processor.

I made the recipe a little different, I used 4 potatoes, 3 zucchinis, a different amount of water and milk, and instead of soy sauce, I used sherry and worchestershire sauce. I also didn't feel the need to add potato flakes.

-Delicious Barley Soup- (Parve)

Prep Time:
Cook Time: 45 minutes-2 hours

Ingredients:
1 C barley
10 C Water + more to cook barley
4 Tbsp oil, for frying
1 onion, diced
2 stalks celery
2 garlic cloves
2 carrots

Directions:
In a small pot, put barley into boiling water and change the water twice.

In a large pot, put oil in to fry the onion, celery, garlic cloves and salt. Once done, add in the carrots.
Pour the barley into the big pot. Add the water and cook on a low flame for 45 minutes-2 hours

-Thai Chicken and Coconut Soup with Noodles- (Fleishig)

Prep Time: 30 minutes
Cook Time: included in prep time

Ingredients:
1 1/2 Tbsp cooking oil
1 small onion, chopped
4 cloves garlic, minced
1 1/2 tsp ground coriander
1/2 tsp ground ginger
1/4 tsp fresh-ground black pepper
1/8 tsp cayenne
1 quart canned low-sodium chicken broth or homemade stock
2 C canned unsweetened coconut milk
5 tsp Asian fish sauce (nam pla or nuoc mam) or soy sauce
1 3/4 tsp salt
2 3-inch-long strips lime zest
1/2 lb. egg fettuccine
1 lb. boneless, skinless chicken breasts, cut into 1/4-inch slices
2 Tbsp lime juice
3 Tbsp chopped cilantro (optional)

Directions:
In a large pot, heat the cooking oil over moderately low heat. Add the onion and cook, stirring occasionally, until it is translucent, about 5 minutes. Add the garlic, coriander, ginger, black pepper, and cayenne; cook, stirring, for 30 seconds.
Add the broth, coconut milk, fish sauce, salt, and lime zest. Bring to a simmer, stirring occasionally. Reduce the heat and simmer, partially covered, for 10 minutes.
Meanwhile, in a large pot of boiling, salted water, cook the fettuccine until just done, about 12 minutes. Drain.
Add the chicken to the soup and simmer until just done, about 1 1/2 minutes. Remove the pot from the heat and stir in the fettuccine, lime juice, and cilantro, if using. Serve the soup in bowls with a fork and spoon.

-Butternut Squash Soup- (Milchig)

Prep Time: 45-60 minutes
Cook Time: 1+ hour

Ingredients:
1 (3 lb) butternut squash
1 Tbsp olive oil
1 tsp kosher salt
1 tsp freshly ground black pepper
2 tsp cinnamon
1 tsp nutmeg
1/2 medium white onion
5 stalks celery
2 Tbsp butter
1 quart chicken stock (use the pareve consomme prepared according to directions, or use vegetable stock...i like the chicken better)
1 C heavy cream
Salt
Pepper to taste
4 crostini rounds (optional)
2 oz. goat cheese (optional)

Directions:
Preheat oven to 375║F. Peel, seed and cut butternut squash into cubes, approx. 1″. Toss with olive oil, salt, pepper, cinnamon and nutmeg. Place squash on baking sheet and roast for 30-40 minutes until fork-tender Meanwhile, dice onion and celery and saute in butter until soft, about 5 minutes. Add roasted squash to saute pan and pour in chicken stock to cover veggies. Cover pan and bring to boil. Once liquid is boiling, uncover and reduce. Puree in a blender or food processor, adding heavy cream, and additional salt and pepper to taste. Reheat and serve.
