-Chinese salad- (Parve)

Prep Time: 5 minutes
Cook Time: 0 minutes

Ingredients:
Shredded lettuce
Purple cabbage
Slivered almonds
Sunflower seeds
Chow mein noodles
4 Tbsp dark brown sugar
1/2 C oil
6 Tbsp vinegar
1/2 tsp salt

Directions:
Mix together brown sugar, oil, vinegar and salt.

Put lettuce, cabbage, almond, seeds, and noodles in a bowl.

Pour dressing over vegetable. Mix all together.

Low calorie coleslaw.

I bag coleslaw vegetables.
Gefen light mayo.
Walden Farm Honey Dijon 0% calorie dressing.
Splenda
Salt, freshly ground black pepper.

I only use a little of the Walden farm dressing for this otherwise it tastes too chemical. A couple of tablespoons of mayo and season to taste.

-Carrot Salad- (Parve)

Prep Time:
Cook Time: 0 minutes

Ingredients:
6-8 carrots, peeled and grated into strands
handful of grapes, sliced in half (according to your minhag you may want to skin them)
1 pineapple, cut into small chunks (I used tinned)
Juice of 1 orange

Directions:
Mix together.

[Comments:]Can serve with cold chicken or meat.

-Tomato Toss- (Parve)

Prep Time: 5 minutes + 3 hours in fridge
Cook Time: 0 minutes

Ingredients:
4 large tomatoes
1 Tbsp parsley
1 clove garlic
6 Tbsp olive oil
2 Tbsp vinegar
1 tsp salt
1/2 tsp basil leaf
1/3 tsp pepper

Directions:
Peel the tomato and cut into medium slices. Sprinkle with parsley.

Mix together the garlic, oil, vinegar, salt, basil leaf and pepper.

Pour over tomatoes and chill 3 hours in tight lidded container.

-The Famous Purple Salad- (Parve)

Prep Time:
Cook Time:

Ingredients:
1 red cabbage
1 bunch scallions
Olive oil
1/3 tsp garlic powder
1/4 C white vinegar
5 or 6 shakes soy sauce
1/4 tsp ginger powder (optional, for a little Asian flavor)
1 handful sesame seeds, toasted

Directions:
Slice, with coarse blade the cabbage or cut into small pieces. Add in scallions.

In a separate bowl, mix remaining ingredients. Pour over cabbage.

-Broccoli Salad- (Milchig)

Prep Time: 20 minutes
Cook Time: 0 minutes

Ingredients:
1 small box broccoli or equal amount of fresh broccoli
1 large or four small plum tomatoes
1 cup kidney beans (canned); I used a cut-up green pepper instead
1 small red onion, cut up
1 capful olive oil
2 Tbsp white vinegar
2 Tbsp lemon juice
1 handful (cup) of shredded cheese, any kind
Salt
Pepper

Directions:
Steam broccoli until soft. If you are using the frozen kind, you may not have to steam it at all, since itís already parboiled I think. Anyway, it would have to defrost first. If you are cooking it, let cool in the freezer a little while you prepare the rest of the salad.

Next, cut up tomato (es) and red onion and put in serving bowl with your beans or pepper. Add the seasonings and the broccoli. Sprinkle with cheese.

-Fake Grilled Veggie Salad- (Parve)

Prep Time: 20 minutes
Cook Time: 0 minutes

Ingredients:
2 red or green bell peppers
4 large red tomatoes
1/3 C parsley
1 clove garlic
2 Tbsp olive oil
2 Tbsp lemon juice
1 tsp salt
1/4 tsp pepper
1/2 tsp cumin

Directions:
Grill peppers under broiler, turning until charred. Place peppers in plastic bag to cool. Remove skin and seeds. Dice.
Scald, peel, seed, and chop the tomatoes coarsely.
In medium mixing bowl, combine vegetables with parsley, garlic, olive oil, lemon juice, salt, pepper, and 1/2 tsp. cumin.

Chill.

Serves: 4-6

-Baby Corn Salad- (Parve)

Prep Time: 5 minutes
Cook Time: 0 minutes

Ingredients:
4 cups celery
2 green peppers
1 red pepper
1 large red onion
1/2 cup sliced pimento stuffed olives
2 tsp salt
1 Tbsp Dijon mustard
2 Tbsp red wine vinegar
6 Tbsp oil
2 Tbsp parsley or cilantro

Directions:
Dice the celery, peppers and onion. Add in the olives.

Mix together the salt, mustard, vinegar and oil. Pour over vegetables.

Sprinkl with parsley or cilantro

Serves: 6-8

Cook Time: 10 minutes

Ingredients:
8-10 carrots
1 green or red pepper (optional)
1 onion
1 apple
1/3 C sugar
1/2 C lemon juice
1/4 C oil
1/2 tsp salt

Directions:
Shred the carrots, pepper and onion.

Boil the sugar, lemon juice, oil and salt. Pour over the vegetables.

-Health Salad- (Parve)

Prep Time: 15 minutes
Cook Time: 5 minutes

Ingredients:
1 small head green cabbage
1 carrot
1 small onion
1 green or red bell pepper
1 cucumber
1/2 C oil (I use less)
3/4 C sugar
1/2 C lemon juice
1 tsp. salt

Directions:
Shredd the cabbage, carrot, onion and pepper.

Slice up a cucumber and add it in.

Heat up the oil, sugar, and lemon juice to a rolling boil. Add in salt. Pour over vegetable. Let stay in fridge.

Cook Time: 0 minutes

Ingredients:
1 can of corn from can
1 red bell pepper
1 C halved baby tomatoes (can use diced canned tomatoes if drained)
1 diced avocado
1/2 diced red onion
2 Tbsp balsamic vinegar

Directions:

Mix all ingredients together.

-Broccoli Craisin Salad-

Prep Time:
Cook Time:

Ingredients:
1 head broccoli, florets chopped very small, stems discarded
1 C mayonnaise
1/2 C sugar
3 Tbsp red wine vinegar
1/2 small red onion, finely minced
1/2 C raisins
1 package ramen noodled, uncooked, discard the seasoning packet (never saw in people's salads; i'm sure, it could be omitted)
1 C raw sunflower seeds, shelled
1 C raw cashews

Directions:
Whisk the mayo, sugar, vinegar, and onion. Pour the dressing over the broccoli. Add in the raisins, crumbled ramen noodles, sunflower seeds and cashews. Toss to combine.

Ingredients:
1 can hearts of palm
5-6 avocados
2 C of cherry/grape tomatoes, cut in half
1/2 cups of red onions, diced
1 heaping Tbsp of mayo
Juice of 1/2 lemon
Salt
Pepper

Directions:
Mix all of the ingredients together.

-Spinach Pomegranate Salad- (Parve)

Prep Time: 5 minutes
Cook time: 0 minutes

Ingredients:
1 bag baby spinach
1 pomegranate
1 Tbsp
1 Tbsp olive oil
1 Tbsp balsamic vinager
1 Tbsp lemon juice
1 Tbsp sugar
Salt
Pepper

Directions:
Mix together oil, vinegar, juice, sugar, salt and pepper for dressing.

Toss leaves, pomegranate seeds and sesame seeds with dressing.

-Matbucha- (Parve)

Prep Time: 5 minutes
Cook Time: 2+ hours

Ingredients:
7 cut up tomatoes
1 diced green pepper
4 cloves garlic, minced
2 Tbsp paprika
3-5 Tbsp olive oil
1/2 tsp turmeric - or more, to taste
Few grinds of fresh black pepper
Pinch of salt

Directions:
Heat oil and then add all ingredients and mix.

Cook on high flame until it boils, then lower the flame to lowest level and let cook for at least 2 hours to thicken. Stir occasionally.

Eat cold. Mmmmmmmmmmmm

-Creamy Honey Garlic Salad Dressing- (Parve)

Prep Time: 3 minutes
Cook Time: 0 minutes

Ingredients:
1 medium lemon
3 Tbsp olive oil
1 Tbsp honey
2 large cloves garlic, minced
Salt, to taste
Fresh ground pepper to taste

Directions:
Squeeze lemon juice into a small bowl.
Add oil, honey, and. Using a spoon, squash the garlic bits to get the garlic juices out.

Mix well. Add salt and pepper to taste [if too sour, add more honey as well].

Transfer to a small jar with lid. Before serving, shake well.

Serves: 6
