-Ultimate Coleslaw- (parve)
prep time: 15 minutes

1 bag cole slaw salad.

4 heaping T. mayonnaise
4 T. sugar
2 t. lemon juice

Mix it all up and keep in fridge for like at least 10 minutes so flavors saturate.

Okay, I've got to get to my closet and get some ancient southern secrets in here.
If not for my attempts to be a "good Christian" (i.e. someone who follows what Jesus taught and not what the Pauline Epistles taught), I doubt I'd be an orthodox Jew right now. Shemmy

13, 22 and 28 are all the same salad.

My poor SO still thinks that a Batya is a what, and not a who.

#13 is edited to sound less silly than my original post, which was not intended for publication. Nor do I now believe that my rebbetzin Yosefa invented the salad.

-Susie Fishbanes' Purple Cabbage Salad (Parve)

Prep Time: 10 minutes
Cook Time: 0 minutes

Ingredients:
Salad:
1 bag of shredded purple cabbage
3-4 chopped scallions
1/3 C pine nuts (or whatever suits your fancy)
3 carrots julienned (not grated)
1 can mandarin oranges, juice reserved
1 handful of craisins
Dressing:
4 Tbsp brown sugar
1/2 tsp pepper
1/4 tsp salt
4 Tbsp vinegar
1 Tbsp juice from the mandarin oranges
1/2 cup oil (please use much, much less. it's not necessary to use the full amount)
1 tsp chicken soup mix (use less)
Garlic powder (can be omitted)

Directions:
Mix together dressing ingredients.

Put all salad ingredients in a bowl.

Pour dressing over salad.

Serves:

-Coleslaw- (Parve)

Prep Time:
Cook Time:

Ingredients:
Salad:
1 bag of coleslaw mix,
2 granny smith apples, thinly sliced
1 C of pecans, toasted and chopped
Dressing:
2 tsp of dijon mustard
1 tsp sugar (Or more, depending how you like it)
1/2 tsp cayenne
1/2 tsp ground cumin
3/4 C of mayonnaise
1 lemon, juiced
Salt
Pepper

Directions:
Mix together dressing ingredients.

Put salad ingredients in a bowl.

Pour dressing over salad.

Serves:

-Spinach Salad- (Parve)

Prep Time:
Cook Time: 0 minutes

Ingredients:
Salad:
2 bags of baby spinach
1 can of hearts of palm
1 box of mushrooms
1/2 C of shredded almonds
1 box of grape tomatoes
Dressing:
1/4 C sugar
1/2 C of ketchup
2 cloves of garlic
1 tsp of mustard
1/2 tsp salt
1/2 C vinegar
1/2 tsp of paprika

Directions:
Place salad ingredients in a bowl.

Mix together dressing ingredients. Pour over salad.

-Deli Salad- (Meat)

Prep Time:
Cook Time:

Ingredients:
Lettuce or lettuce mix
Assorted sliced deli meats
Craisins
Pine nuts
2 Tbsp honey
2 Tbsp sugar
6 Tbsp oil
1/2 tsp Dijon mustard
2 Tbsp red wine vinegar
Salt

Directions:
In a bowl, mix together honey, sugar, oil, mustard, vinegar and salt.

In serving bowl, pour in lettuce, deli, craisins, and pine nuts. Pour dressing over salad and mix.

-Mushroom Salad- (Parve)

Prep Time: 15 minutes
Cook Time: 8-10 minutes

Ingredients:
1 package portabello mushrooms, sliced or slice it yourself
Cherry tomatoes
Romaine lettuce
Salt
Pepper
Oil
2/3 C oil
1/4 C vinegar
1/4 C sugar
1 crushed garlic clove
1/2 tsp salt
1/4 tsp dry mustard
1/4 tsp paprika

Directions:
Put mushrooms on a baking tray, sprinkle with salt, pepper, and oil. Broil for 8-10 minutes, until grilled but not crispy.

Mix together oil, vinegar, sugar, garlic, salt, mustard and paprika.

Put tomatoes, mushrooms and lettuce in a bowl. Pour dressing over it and mix well.

Serves:

-Eatingwell.com's Wheat Berry Salad- (Parve)

Prep Time: 50 minutes
Cook Time: 0 minutes

Ingredients:
1/3 C freshly squeezed orange juice
1/3 C dried cranberries
3 C Cooked Wheat Berries
1 large Fuji apple, unpeeled, diced
1/2 C pecan halves, toasted (see Tip) and coarsely chopped (we use almonds)
3 Tbsp raspberry vinegar (we use red wine vinegar and rice wine vinegar combined)
3 Tbsp extra-virgin olive oil
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper

Directions:
Combine orange juice and cranberries in a small bowl. Let stand for 15 minutes.

Combine wheat berries, apple and pecans in a large bowl; stir gently. Drain the cranberries, reserving the juice. Stir the cranberries into the wheat berry mixture.

Whisk the reserved orange juice, vinegar and oil in a small bowl until combined. Season with salt and pepper. Pour over the salad and stir gently to coat. Refrigerate for at least 30 minutes to allow the flavors to combine. Serve cold or at room temperature.

To toast pecans, spread nuts onto a baking sheet and bake at 350F, stirring once, until fragrant, 7 to 9 minutes.
