-Couscous Salad with Mandarins- (Parve)

Prep Time:
Cook Time:

Ingredients:
Dressing:
Crushed garlic, to taste
2 Tbsp olive oil
1/4 C orange juice
1/3 C reserved mandarin juice
1 tsp cumin
1 tsp salt
Dash of pepper
Dash of cayenne
Salad:
2 C couscous, cooked according to package directions, and cooled
1 tsp olive oil
1/4 tsp turmeric
1 can mandarin oranges, drained
1 can chickpeas
1 C green onions, chopped
1/2 C coriander
1/4 C dried cranberries

Directions:
Mix together ingredients for dressing. Mix together ingredients for salad. Pour dressing over salad, but do not over saturate.

I'm attaching an awesome salad recipe I received from my cousin. We don't use the chips in the salad, but that's personal preference. Enjoy! :)

I'm not sure where it's from, but I'll take your word.

My mom didn't want the chips. She was afraid they'd get soggy. It's great without the chips as well. :)

Black Eyed Pea Salad ( pareve)

Prep time:10 minutes
Cook time:Refrigerate 8 hrs or overnight

Ingredients:
2 (15.5 oz) cans black-eyed peas (drained and rinsed)
1 large tomato, chopped
1 medium red bell pepper, chopped
1 small bunch green onions
1 stalk celery, chopped
1 tbsp chopped fresh parsley
3 tbsp balsamic vinegar
2 tbsp olive oil
salt and pepper to taste

Directions:
Prep: Chop tomato,bell peppers,onion, and celery into pieces about the same size as a black eyed pea. A food processor cuts prep time from 10 minutes to about 20 seconds.Chop parsley.

1. In a medium bowl, toss together drained and rinsed black-eyed peas, tomato, red bell pepper, green onions, celery, and parsley.
2.In a small bowl, mix balsamic vinegar and olive oil. Season with salt and pepper to taste. Toss into the vegetables. Cover, and chill in the refrigerator 8 hours, or overnight.

Note: You can sub a green bell pepper for the red and half a red onion for the green ones

Serves: 6
