-Green Bean Almondine- (pareve)

Prep time: 5 minutes
Cook time: 10 minutes

Ingredients:
1 lb of string beans, ends removed
1/2 lb of mushrooms, sliced
2 TBSP oil
1/4 C of slivered almonds
salt
pepper

Directions:
Remove strings from string beans and wash them.
Wash and slice the mushrooms.
In a medium sauce pan, place stringbeans and 1/3 C water. Cover. Bring to a boil, and then reduce heat to a simmer.
Simmer for around 9 minutes, or until tender.
While the green beans are cooking, heat oil in a large pan.
Sautee the mushrooms and almonds over low-medium heat, stirring constantly so they won't stick and burn.
When the green beans are tender, drain the water, and put uncovered pot back on fire so the rest of the water evaporates.
Add the green beans to the skillet, and toss.
Season with salt and pepper over the fire to taste. Toss to coat.

Serves: 6

Zucchini in Sauce Pareve
Prep time: 20 minutes

1 onion
2 medium zucchinis
3-4 tbsp tomato paste
salt, pepper to taste

Cube the zucchinis and dice the onions. Fry in a large pan till soft (approx 10 minutes). You will see the seeds of the zucchini starting to come out.
Stir the tomato paste (more for a more tomatoey taste) into a little bit of water (aprox 1/4 c) and pour into the pan with the zucchinis.
Let it cook on a low flame for another 5 minutes for the vegetables to absorb the sauce.

Can be served hot as a side dish or topping on rice, or cold as a dip.

Turmeric Rice (pareve)
Cook Time: 20 minutes

Ingredients:
1 C of rice
oil
2 C water, boiling
1 tsp salt
onion powder
garlic powder
1/2 tsp turmeric

Directions:
In medium saucepan, heat a bit of oil on medium heat. Add the rice, and stir to coat. Heat until some of the grains start turning an opaque white (it sometimes smells like popcorn cooking ). Quickly add the cups of boiling water, the salt, a couple shakes of onion powder and garlic powder, and the turmeric. Cover, bring back to boil if it's not, and simmer on low heat until all the water has evaporated, approximately 16 minutes or so...
Makes it nice and yellow and fancy looking :)

Serves: 3-4
