Prep Time:
Cook Time: 45 minutes

Ingredients:
5 pounds carrots
1/2 cup sugar
1/2 cup honey
1/2 cup oil

Directions:
Boil carrots in water until just tender. Drain. Add sugar, honey and oil. Let simmer for 45 minutes to an hour. It is delicious. It becomes tangy and candied.

-Spinach Noodle Kugel- (Parve)

Prep Time: 30 minutes
Cook Time: 1 hour

Ingredients:
1 12 oz. medium noodles
2 10 oz pkg chopped spinach
3 eggs
1 1/4 cup unflavored soy milk
1/2 stick margarine
1 Tbsp. dried minced onion
1 tsp. onion powder
(1 envelope onion soup mix)

Directions:
Cook and drain noodles and cut up margarine into hot noodles and combine. Add defrosted chopped spinach. Beat eggs and add with remaining ingredients.

Bake at 325F for 1 hour

Vegetable Tian - Pareve

Serves: 6-8
Prep time: 15 minutes
Cook time: 1 hour

6 Tbsp. extra-virgin olive oil
1 leek, white and pale green parts only, rinsed and sliced
1 garlic clove minced
coarse salt and pepper
1 zucchini, unpeeled, sliced thin
1 yellow squash, unpeeled, sliced thin
2 plum tomatoes, sliced thin
1 small eggplant, unpeeled, sliced thin
1/4 C. dry white wine
1 Tbsp. chopped fresh oregano

Preheat oven to 375. Heat 3 Tbsp. oil in skillet over medium heat. Add leek and garlic, season with salt and pepper, and cook until soft, about 4 minutes. Spread in 9" round baking dish. (Preferable to use a baking dish that you can bring to the table; this looks beautiful and cutting into it ruins the presentation.)

Arrange vegetables on leek in slightly overlapping circles, alternation zucchini, squash, tomatoes and eggplant. Lightly sprinkle with salt and pepper between layers.

Top with wine, 1 Tbsp. oil, oregano, salt and pepper. Bake 30 minutes. Drizzle with remaining oil. Bake until vegetables are tender, about 30 more minutes.

Serve warm.

Ingredients:
12-18 ounces of cooked noodles
Salt
Pepper
2 eggs
1 Tbsp oil

Directions:
Mix together and bake til light brown crispy on top.

-Pumpkin Muffins- (Parve)

Prep Time: 5 minutes
Cook Time: 20 minutes

Ingredients:
1 C canned pumpkin
1/2 C sugar
1/2 C oil
1 egg
1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg (I didn't have any, and left it out, and still it turned out fine.)
3/4 C flour
Add 1/2 C broken walnuts

Directions:

Preheat oven to 350F.

In a bowl, mix together pumpkin, sugar, oil and egg.

Add in baking powder, baking soda, cinnamon, nutmeg and flour. Mix.

Add in walnuts and mix.

Divide into 12 muffin holders evenly and bake for 25 minutes.

Serves: 12

-Kishke/Stuffing- (parve)

Prep Time: 15 minutes
Cook Time: 30 minutes

Ingredients:
2 carrots
2 potatoes
1 onion
1 celery stick
3/4 C oil
1.5 C flour
1 tsp salt
1 Tbsp paprika

Directions:
Grate it or put in the food processor the carrots, potatoes, onion and celery.

Add in the oil, flour, salt and paprika.

Bake for 30 minutes at 350F.

For kishka: Roll into silver foil and put into cholent.
For stuffing: put into chicken and bake.

Ingredients:

1 Tbsp onion soup mix

Directions:

Bake for 30 mins at 350F.

Split this into two pans.

Slice the zucchini and cook in salted water for approximately 20 minutes.

Layer in pan.

Mix together the mayonnaise, eggs, and onion soup mix.

Pour over the top.

Bake uncovered at 375F for 45 minutes.

-Cauliflower Fritters- (Parve)

Prep Time: 25 minutes
Cook Time: 20 minutes

Ingredients:
1 head cauliflower, broken into small florets
1 onion
7 sprigs fresh parsley
5 cloves garlic
1 1/2 C all-purpose flour
1 tsp salt
1/4 tsp ground black pepper
1 tsp ground cumin
1 tsp ground allspice
1/2 tsp ground cinnamon
1/4 tsp ground cloves
1/4 tsp ground nutmeg
1 tsp active dry yeast
1 C warm water
1/4 C vegetable oil
1/4 C olive oil
4 eggs

Directions:
Parboil the cauliflower not more than 10 minutes; it should still be firm. Set it aside to cool.

In a food processor, finely chop the onion and parsley together. Drain well. Crush garlic with a mortar and pestle, or with the bottom of a drinking glass.

While onion mixture is draining, combine the flour, salt, pepper, cumin, allspice, cinnamon, cloves, and nutmeg in a large mixing bowl. Sprinkle the dry yeast over the flour. Combine the crushed garlic with the warm water, then pour the mixture over the flour. Mix well, cover, and set the dough aside for 10 minutes to allow it time to rise.

Combine vegetable oil with olive oil and begin heating in a large saucepan (oil should be 1/2 inch deep). Bring to a temperature of 365F (180C).

Beat the eggs until they are frothy and light. Quickly fold them into the dough, then add the cauliflower, onions, and parsley. If the consistency of batter is too runny, add flour; if too thick, add water. The consistency should be similar to thick pancake batter -- not too runny and not too thick.

Gently slide a spoonful of the batter into the oil, and spread it out flat. Cook 3 to 4 patties at a time over a medium-high heat, turning until they are golden brown. Remove the patties with a slotted spoon, and let them drain on paper towels.

-Corn Kugel- (Parve)

Prep Time: 3 minutes
Cook Time: 45 minutes

Ingredients:
2 boxes or 1 large bag frozen corn kernels (the recipe calls for 2 cans of niblets, but vastly prefer the frozen kernels)
1/2 C sugar
1 C rice milk, soy milk or coffee rich
4 eggs
6 Tbsp of flour
1/2 stick margerine, melted
2 tsp vanilla

Directions:
Mix it all together. (If you use frozen kernels, let them defrost to at least fridge temperature or it will make the margerine congeal.) Pour into a greased pan and bake at 375F for 45 minutes. You need to use a pan between an 8 inch square (it will be too thick and won't cook through) and a 9X13 (It will be too flat). The lasagna size foil pans work. I usually use an oval corning baking dish.

-KBD's Corn Kugel- (Parve)

Prep Time: 3 minutes
Cook Time:

Ingredients:
2 (15 ounce) cans creamed corn
1/2 C melted margarine
1/4 C sugar
3 eggs
1/2 C flour
1 tsp baking powder
3/4 C Coffee Rich (She used the lo-fat)
1/4 C water
1 tsp vanilla

Directions:
Mix all ingredients together. Bake at 350F.

-Broccoli Kugel- (Parve)

Prep Time: 10 minutes
Cook Time:

Ingredients:
1 onion
1/2 C mayonnaise
4 eggs
Breadcrumbs or Matzo meal
Onion soup mix
1 bag frozen cauliflower
1 bag frozen broccoli

Directions:
Sautee the onion. Add in 1/4 cup mayonnaise, 2 eggs, breadcrumbs or matzah meal, and onion soup mix to processed Cauliflower. Put in a pan and bake at 350 until it's solid.

Mix the same ingredients with the broccoli and pour it on top of the cauliflower. Bake until it's brown.

-Eggplant Dip- (Milchig or Parve)

Prep Time:
Cook Time:

Ingredients:
2 medium eggplants
2 medium onions, chopped
8 cloves garlic, grated
1/4 C butter or shortening
1 tsp turmeric
1/2 tsp salt
1/4 tsp pepper
1 tomato
4 eggs

Directions:
Roast the eggplants over a charcoal grill until brown. Or roast them in a 400F oven until brown on the outside and soft on the inside (test
with a fork). Cool and peel. Mash the pulp. Saute the onions and garlic in the butter or shortening until golden brown. Stir in the turmeric. Add the eggplant pulp and saute briefly, stirring well. Add the salt and pepper.

Drop the tomato briefly into hot water to loosen its skin, and then peel. chop it into small pieces, and stir them into the eggplant. Cook
over a low heat for 5 minutes. Beat the eggs and pour them over the eggplant. When the eggs start to solidify, stir briefly, and serve.

-Eggplant Steaks- (Milchig)

Prep Time:

Ingredients:
1 to 3 cloves of garlic, finely chopped
1/3 C lemon juice
1/3 C olive oil
1/4 C chopped basil (I just used a sprinkling of Italian seasoning)
1 Tbsp sugar
1 tsp oregano (I omitted this since i used the Italian seasoning).
5 baby Italian eggplants (or 1 large eggplants, sliced in 1/2 inch rounds).
9 plum tomatoes, 4 sliced and 5 chopped
8 oz roll of goat cheese (I think mozzarella would be fine instead of this)
1/2 cup fresh basil (see above)
1 Tbsp finely chopped onion (I just used one small onion)
Salt
Pepper


Directions:
In large bowl, mix together garlic, lemon juice, oil, basil, sugar, and oregano.

Toss together 5 baby Italian eggplants (or 1 large eggplants, sliced in 1/2 inch rounds). Broil or grill for 2 minutes, until brown. Turn over and repeat.

Place 4 plum tomatoes, sliced, and an 8 oz roll of goat cheese (I think mozzarella would be fine instead of this), on top of the eggplant slices. Place another piece of eggplant on top to make a sandwich(I didn't do this, I just served it as-is).

Serve with topping as follows: mix 5 chopped plum tomatoes, 1/2 cup fresh basil (see above), 1 tablespoon finely chopped onion (I just used one small onion), and salt and pepper to taste. Let sit for an hour at room temperature for flavors to "ripen".

-Eggplant Fritters- (Parve)

Cook Time: 15 minutes

Ingredients:
1 large or 2 small eggplants
Salt water
1 egg, slightly beaten
1 small onion, finely minced
1/2 tsp sage or poultry seasoning
Salt, to taste
Pepper, to taste
Flour

Directions:
Peel and dice eggplants. It will look like an awful lot of eggplant, but cooks up to less than half the original bulk so don’t be afraid of the large volume. Cool in boiling salted water until tender. Drain very well. Mash thoroughly.

Add egg, onion, sage or poultry seasoning, and salt and pepper to taste. Stir in enough flour to make a fairly stiff mixture. Drop by teaspoons into a small amount of hot oil and brown evenly on both sides.
