Please post recipes in the format that we've agreed upon below. If you have any more ideas or comments feel free to vocalize. :)

-Citrus Chicken Broccoli Stir Fry- (fleishigs) [duh ;) not sure this is necessary in poultry section]

Prep time:5 minutes
Cook time:15 minutes

Ingredients:
oil for sauteeing
1/2 -3/4 lb. of chicken cutlets
3 garlic cloves
8 ounces frozen broccoli
seasoned salt
paprika
small can of mandarin oranges (size doesn't need to be exact)
1/4 cup of cashews (can substitute almonds)

Directions:
Cut the chicken cutlets into 1" strips.
Mince the garlic cloves (slicing is fine too).

In a large wok, heat up enough oil to cover the bottom of the pan. Alternatively, one can take a paper towel and spread oil over the pan that way.

When it's hot, add the garlic, cook for 30 seconds, stirring frequently, and add in chicken.
Cook chicken until brown on both sides, approximately 4-6 minutes.
Give a shake or two of seasoned salt and paprika to your liking.
Add in the frozen broccoli, and stir.
When the ice has all melted, and the broccoli starts softening, add juice from the mandarin orange can.
Pour in about 4 ounces so that the pan has the juice all over the chicken.
Let it boil out, but watch it so that the chicken doesn't start burning.
When it has basically boiled out, add some more and the nuts and stir fry until there is almost no liquid remaining.

Serves: 2-4

-Turkey Roast- (Fleishigs) - If it's under meat, isn't that obvious?

Prep Time: 10 minutes
Cook Time: 1.5-2 hours

Ingredients:
1 turkey roast (It goes by different names at different butchers but it's RAW turkey that looks similar to a meat roast, but turkey colored)
2 cans of cranberry sauce
3-4 large onions, sliced

Directions:

Layer half of the onions on bottom of pan
Stick Roast on top
Pour sauce all over the 'roast'
Top with remaining onions
Cover with foil
Cook at 350F for approximately 1.5-2.0 hours

-Pan Fried Chicken - (Fleishigs)

Prep time: 5 minutes
Cook time: 40 minutes

Ingredients:
Chicken Cutlets
1/2 " oil
Eggs, beaten
Matzo meal with spices added in.

Directions:
Preheat over to 350F
Pour about 1/2 inch oil into aluminum pan.
Dip cutlets in eggs (beaten) and then matzo meal with spices added in.
Bake 40 minutes, flipping once.

-Shnitzel Pie - (Fleishigs)

Prep time: 10 minutes
Cook time: 45 minutes

Ingredients:
Chicken Cutlets
Duck Sauces
Pastrami, sliced
Potatoes, mashed with spices of choice

Directions:
Cut chicken cutlets into cubes
Layer on bottom of pan
Slather with duck sauce
Layer with pastrami
Layer with mashed potatoes

Bake at 350F for 45 minutes.

-Easy one-pot Chicken with Rice- (Fleishig)

Prep time: 5 minutes
Cook time: 1 hour

Ingredients:

Rice
Chicken pieces
Any vegetables, cut into large chunks (i.e. carrots, celery, peppers)
Orange or apple juice
Water


Directions:

Pour rice into bottom of a large pot. Layer Chicken pieces and vegetables on top of rice, and cover with 1/2 juice and 1/2 water. Bring to a boil, then lower flame and simmer until chicken is cooked through and rice is done.

Serves:

-Lemon Wine Chicken- (Fleishigs)

Prep Time: 7 hours
Cook Time: 20 minutes

Ingredients:
Boneless chicken breast
2 cups of wine
1/2 cup lemon juice
Flour
Salt
Pepper

Directions:
Pound chicken breasts. Marinate in wine and lemon juice for 6 to 7 hours.

Mix flour with salt and pepper, to taste.

Coat cutlets in flour mixture. Fry.

-Honey Mustard Chicken- (Fleishigs)

Prep Time: 2 minutes
Cook Time: 1.5 hours

Ingredients:
Honey
Mustard
Chicken

Directions:
Mix equal parts honey and mustard. Stick in microwave for 30 seconds.

Pour over chicken. Make sure there is enough sauce for bottom of pan.

Bake at 350F for 1.5 hours

Ingredients:

Large pot:
Chicken
Potatoes (sweet too if you like them)
Carrots
Onions
Garlic
Paprika
Water
Chicken Stock or soup mix.
Green olives (optional)

Directions:

Put everything in pot (some people like to brown the onions and chicken first) cook until it is cooked.

-Moroccan Chicken-

Prep Time: 1 day
Cook time: 1 hour

Ingredients:

4 Whole chickens, quartered
12 cloves garlic, minced
3 Tbsp. dried Thyme
1 Tbsp. ground Cumin
2 tsp. ground ginger
1 tsp. salt
1 cup red wine vinegar
1 cup olive oil
2 cups whole pitted black olives
3 cups dried apricots
2 cups dried small figs
1/2 cup brown sugar or honey
2 cups large pecan pieces or almond slivers (optional)
grated zest of 4 lemons (add in 1 hr. before finished cooking)
1 cup good red wine

Directions:

The day before cooking, combine the chicken, garlic, thyme, garlic, cumin, ginger, salt, wine vinegar, oil, olives, apricots and figs in 2 large bowls (or plastic bags) dividing the ingredients equally: marinate covered in fridge overnight. Mix up several times during the day. Remove from fridge one hour before cooking.

preheat oven to 350

arrange chicken in single layer in 2 heavy shallow baking pans. Sprinkle with brown sugar, nuts and pour wine between pieces in both pans.

Cover the pans with foil and bake 20 minutes, remove foil and bake, basting frequently, for 50 minutes. (alternately, bake for a longer time at 300 degrees)

Using a fork and slotted spoon, transfer chicken, olives, dried fruits and nuts to serving platter. Drizzle with pan juices

Serves: 12

Grilled Parsley Chicken

Prep time: 5 minutes
Cook time: 5 minutes

Ingredients:

4 pieces Chicken breast
2 Tbsp oil
1 bunch parsley
3 cloves garlic

Directions:

Combine parsley, oil, and garlic in a pan. Mix well. Coat the chicken breasts and grill.


Serves: 4

-Darn Good Shnitzel- (Fleishigs)

Prep Time: 10 minutes
Cook Time: 15 - 20 minutes

Ingredients:
3 whole chicken cutlets
Bread crumbs (crushed corn flakes are good)
3+ Tbsp. corn oil
3-4 eggs

Directions:
Cut open the chicken cutlets by slicing them at an angle. cut thinly and into small strips.

Check the eggs for blood and what not and then beat them until they become really gooey.

Dip the chicken strips into the egg batter and then into the bread crumbs. its best to put the bread crumbs into a mixing bowl. that'll give you a lot of wokspace to really get the crumbs all over the shnitzel.

While the shnitzel is in there, beat it until its super thin. that make it quick to cook so it keeps in the moisture and stays juicy.
put some oil in the pan. something like 3 tablespoons and start frying up the food. fry until light brown.

Serves: 4 large portions

-Shnitzel- (Fleishigs)

Prep Time: 5 minutes
Cook Time: 15-20 minutes

Ingredients:
1 large onion
Mayonnaise
Mustard Powder
Garlic
Spices of Choice
Chicken Cutlets
Seasoned breadcrumbs

Directions:
Sautee a large onion.

Mix mayonnaise with mustard powder, garlic, and other spices (or mix the mayonnaise with mustard).

Cut the chicken cutlets into thin slices (or not so thin, whatever you like).

Dip the chicken in mayo mixture and then in seasoned breadcrumbs.

Place chicken in pan sprayed with Pam and then spread the onions on and around the chicken.

Bake at 350F until crispy.

Prep Time: 5 to 10 minutes
Cook Time: 15 minutes

Ingredients:
Chicken cutlets
1-2 eggs
Bowl of flour
Desired spices (garlic, onion, pepper, seasoned salt, etc.)
1/3 C honey
1/3 C soy sauce
Garlic
Ginger.


Directions:
Cut up cutlets.
Beat 1-2 eggs.

Prepare bowl of flour, add desired spices (garlic, onion, pepper, seasoned salt, etc.)

Dip chicken in egg, and then flour.

Fry.

Heat 1/3 C honey, 1/3 C soy sauce, garlic & ginger in a small saucepan.

Dip shnitzel into sauce and place in pan.

Bake at 250F for 15 min.
