Coffee Nut Cake (Pareve)

Prep time: 25 mins.
Cook (bake) time: 35-40 mins.

Ingredients

6 eggs separated
1 cups sugar
cups Potato starch (little more)
2 Teaspoons coffee dissolved in hot water
cups of oil
2 scoops (tablespoon) vanilla sugar
cup nuts (crushed almonds or walnuts)

Directions

Mix egg whites till it becomes a snow. (Scoop some out with a spatula, if it sticks to the spatula it’s done, if it falls off, mix it more.)
Add half the sugar to the white mixture while mixing continuously. (The other half of the sugar goes in the yolk mixture.)
In a separate bowl, mix the rest of the ingredients (slowly).

Fold the white mixture into the yolk mixture (mix by hand with spatula).

Put batter into a 9” 13” pan.

Preheat oven to 350, bake for 40-45 minutes until ready.

Will post picture next Pesach.

Pesach vol au vent cases.

Sorry I really don't have the exact amounts. Mix up a sachet of instant mashed potato according to directions on the box. Put the mixture into a plastic bag and cut a hole in one corner. Pipe neat nests of this onto a baking sheet. Bake in a hot oven until just a little browned on top and holding their shape.

Fill with mushrooms and onions, or mini meat balls in sauce, as a first course.

ETA: I just remembered that someone on h.com gave me this recipe this Pesach, it's not my own invention.

-Mishpacha's Family First Egg Rolls- (Fleishig)

Prep Time:
Cook Time:

Ingredients:
Blintz leaves: (Crepes... I'm sure you know how to make 'em but here it is anyway:)
12 Tbsp Potato starch
1 C cold water
12 eggs
Salt to taste
Filling
2 onions
2 Tbsp (for some reason it was left blank but I'm sure they meant to write) oil
4 carrots, shredded
1 kohlrabi, shredded
Shredded cooked chicken pieces, optional
Fresh ginger
Salt to taste

Directions:
Blintz leaves:
Dissolve potato starch in water. Beat with eggs and season with salt. Blend well.

Heat Teflon skillet with 1 Tbsp of oil. Use a paper towel to smear skillet with oil. When skillet is hot, fill a ladle 3/4 full of the batter and transfer to pan. Maneuver the pan so that the batter spreads to cover entire surface. When the crepe turns light brown, turn over and fry on other side.

Continue with remaining batter. If you use a Teflon skillet there is no need to re-oil the pan. For other pans keep surface slick by wiping down with a greased paper towel and a drop of oil.

Filling:
Saute onions in oil. Add shredded carrots and kohlrabi and cook until soft, stirring occasionally. Grate in fresh ginger and salt to taste Add optional chicken.

Drain filling well.

To assemble, fill leaves, tuck in both ends and roll up.

Fry in oil until golden brown on both sides. Serve with Pesach duck sauce.

Ridiculously Easy To Make Chocolate Mousse:

1 and 1/3 cup kosher l'pesach chocolate chips
1/3 cup sugar
2 eggs
2 tablespoons dry wine
a bit more than 2/3 of a cup boiling milk

Put the chocolate chips, the checked whole eggs, sugar and dry wine into a blender, and liquify.
Put the milk into a cup in the microwave and heat until scalding.
Pour it into the blender as it continues to blend.
Stop the blender after there are no more streaks of white, and run a spatula down the sides.
Reblend.
Place in refrigerator for an hour.
Enjoy!

I made this today, loosely based on a recipe I found online. It came out absolutely, creamily, delicious but it really needs the brandy to taste right, which I left out.
This is enough for 6 servings.
