Pumpkin Pie (Can be either dairy or pareve)

Serves 8

Prep time: 10 minutes
Bake time: Until set

Preheat oven to 350.

Raw pie crust
3/4 C. sugar
1/2 tsp. salt
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
2 eggs
1 can (15 oz) pumpkin
12 oz. soy milk (or regular milk)

Mix all powders together. Beat eggs. Add pumpkin and powders to the eggs. Add soy milk. Mix well.

Pour into pie crust. Sprinkle whole cloves on for garnish. Bake until set.

Can be served as dessert, or as a side dish.

-Pie Crusts- (Parve)

Prep Time: 40 minutes
Cook Time: 0 minutes

Ingredients:
1 1/4 C (165g) all purpose flour
1/2 tsp salt
7 Tbsp (100g) fat of choice (if using butter, do 5 Tbsp butter to 2 Tbsp shortening--easier to roll), cut into 1/4" cubes and kept very cold
1 Tbsp sugar (optional--good for sweet fillings)
4-5 Tbsp ice water

Directions:
Combine the flour, salt, and sugar. Add the fat, and cut in till it's the size of small peas (or use a food processor if you have one). Add just enough water to make it hold together, flatten into a disk, wrap in Saran and chill at least 30min before rolling out.

Yield: 1 9"/23cm pie shell

Chocolate Mousse - Pareve or Dairy

Prep Time: 10 minutes

Makes 6 servings:

2 cups chocolate chips
6 egg yolks
1 tsp vanilla extract (you can substitute mint, rum, etc)
1/4 tsp. salt
1.5 cups light cream or vanilla soy milk (I used almond milk)
1 cup heavy cream or whipping cream
3 Tbs. confectioner's sugar

Blend the chips. Boil the soy milk until it's just bubbling, and pour into blender. Blend for 30 seconds so it melts the chocolate. Add the eggs, vanilla and salt, and blend for another 10 seconds. Pour into cups and refrigerate.

For the whipped cream, whip up one container of rich's whip (1 cup) and add 3 Tbs. of confectioner's sugar. Whip until soft peaks form. Add a dollop of the cream and sprinkle cocoa powder on top.

Strawberry/Blueberry/Raspberry/Blackberry/Cherry Napoleons - Pareve

Serves 6

Prep time: 15 minutes
Bake time: 10 minutes

9 squares of puff pastry dough (3x3") (they grow very puffy, so you split them after baked - you'll have 18 squares, 3 for each of 6 pastries.)
1 container Cool Whip
One container sliced and washed berries
a few spoonfuls confectioners sugar
one or two spoonfuls milk or non-dairy milk (I used almond milk)

Bake squares in greased pan on 400 degrees for 10 minutes or until browned. Slice the squares in half horizontally as you would a bagel.

Leave Cool Whip out for a little while to soften. Fill first dough layer with Cool Whip, then strawberries. Repeat with second layer. Top with remaining layer of dough.

TIP: Refrigerate each pastry as you work, bec the Cool Whip melts and gets messy. As you finish each piece, whisk it into the fridge. Serve cold.

Mix sugar and milk into a glaze, and smear onto top layers of all napoleons. Drizzle with chocolate and serve with strawberries.

-Banana Cake- (Parve)

Prep Time:
Cook Time: 45 minutes - 1 hour

Ingredients:
1/2 C margarine
1 C sugar
1 egg
3 mashed bananas
1 1/2 C flour
1 tsp baking soda

Directions:
Mix together the margarine, sugar and egg. Add in bananas, flour, and baking soda.

Bake in 8"x8" at 350F 45 min.-1 hr.

Put in muffin tins, bake at 375F 15-20 minutes.

-Pie Crust- (Parve)

Prep Time:

Ingredients:
2 sticks margerine
2-3 C flour
1 C sugar

Directions:
Place 2 cups of flour and sugar into the bowl
Dump margerine on top

With two knives cut the margerine into the flour and sugar
Use your hands to mik it, it should have a great crumbly texture, add more flour if it is not crummy

This uses a 9" round pie tin

Press the crumps into the bottom of the pie tins, also press it up the sides to form a crust. fill with desired filling,use extra crums on top of the filling,

Bake at 350F until nice and brown.

Yield: 1 9" pie crust

Compote.

Can be eaten on its own, or poured on top of cake or ice cream. Non fattening of course. I am giving a big quantity cos I cook it that way and then freeze some of it for later use.

Prep time: hardly any.
Cook time: approx 15 mns.

3 bags each frozen blueberries and strawberries.
I large jar unsweetened applesauce.
Optional: a little Splenda.


Put all frozen berries in a pan without water. Cook gently; they will make their own liquid. Once they are cooked (about 10-15 mns) drain off the liquid as much as possible; I put them in a sieve; it's quicker! then return to pan and add a whole large jar of applesauce. Stir. That's it.

-Lemon Pie- (Parve)

Prep Time: 5 minutes, 24 hours in freezer
Cook Time:

Ingredients:
1 graham cracker crust
1 can of lemon pie filling
Marshmallow fluff or whipped whip cream

Directions:
Pour pie filling into crust. Top with fluff/cream. Freeze overnight.

Serves: 8

-Toffuti Cheesecake- Parve

Prep Time: 10 minutes
Cook Time: 0 minutes

Ingredients:
2 riches whip
3 tubs of toffuti (plain) cream cheese
2/3 pack of instant vanilla pudding powder
some vanilla
splash lemon juice
2 graham cracker crusts
Fresh fruit (optional)

Directions:
In a mixer, with beaters, beat the rich's whip. Add in the cream cheese, pudding powder, vanilla and lemon juice.

Pour into two graham cracker crusts and top with fresh fruit. i use strawberries cut in half. cut side down. you can mix anything you want into the cheescake, like chocolate swirls or chips. what ever you want!!!

Serves: 16

-Crumpets- (Dairy)

Prep Time:
Cook Time:

Ingredients:
1 C self raising flour
2 Tbsp sugar
1/2 C milk
1 drop oil
1/4 tsp Bi-carbonate soda
1 egg

Directions:
Sift dry ingredients, add the rest of ingredients and stir with a spoon until well blended. A few lumps won't hurt.

Place by tablespoonful into a moderately hot frying pan which has been lightly greased once only and cook until light brown on both sides.
Don't make them too small as it will cause them to be dry.

Serve with either Jelly, Cream syrup etc...

Prep Time: 10 minutes
Cook Time: 8-10 minutes

Ingredients:
1/2 C Crisco
1/2 C margarine
1 1/2 C sugar
2 eggs
2 3/4 C flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
Cinnamon sugar

Directions:
Combine all ingredients, except the cinnamon sugar. Roll into balls. Roll balls in cinnamon sugar. Bake 8-10 minutes at 375F.

Yields: 6 dozen

Ingredients:
1 c margarine, softened
3/4 C sugar
3/4 C brown sugar
1 tsp Vanilla extract
2 whole Eggs
2 1/2 C Flour
1 tsp Baking Powder
6 oz chocolate chips

Directions:
Preheat oven to 350F.
Cream margarine and sugars
Add vanilla and eggs, one at a time
Combine flour and baking powder and add to mixture.
Mix until dough is formed.
add chocolate chips, mix until they are evenly distributed.

make teaspoon sized balls on cookie sheet, leaving approximately 2 inches between each ball.
Bake for 13-15 minutes or until bottom of the cookies are slightly brown and tops are still soft.
the cookies will harden as they cool.

Yield: 4 dozen cookies

-Chocolate Chip Cookie Perfection- (Parve)

Prep Time: 10 minutes
Cook Time: 9-12 minutes

Ingredients:
8 ounces (2 sticks) unsalted butter, at room temperature
1 cup packed dark brown sugar
1/2 cup granulated sugar
2 large eggs
2 cups all-purpose flour
1 teaspoon salt
3/4 teaspoon baking soda
1 teaspoon pure vanilla extract
4 cups semisweet chunks (preferably imported)

Directions:
1. Place the butter in a large bowl and cream at high speed until fluffy. Add the sugars and beat until light and fluffy, about 4 minutes, scraping down sides of bowl occasionally. Beat in eggs, one at a time, until completely mixed.

2. In a separate bowl, mix flour, salt and baking soda. Add to the butter mixture at low speed until just combined and add vanilla extract. Beat on medium speed, scraping bowl down, until blended. Do not overmix.

3. Add chocolate chunks and mix till thoroughly combined. Refrigerate batter until cold, preferably overnight.

4. Preheat a conventional oven to 350 degrees or a convection oven to 300F degrees, and line several baking sheets with parchment paper. Drop
heaping spoonfuls of batter 2 inches apart on the lined baking sheets and bake, turning tray once, until golden brown around edges and soft
(but not bubbly), about 9 minutes in a convection oven or 12 in a conventional one. Cool on a wire rack.

Yield: 36 to 72 cookies, depending on size.
