--Spanekh b'jibn (Syrian spinach and cheese frittata)-- (Dairy)

Prep time: 10 minutes
Cook time: 40 minutes

1 onion, chopped and sauteed until translucent
2-10 oz. packages frozen spinach
6 eggs, beaten
1-3/4 lbs. Muenster cheese, grated
1 tsp. kosher salt
1/2 lb cottage cheese (optional)

Directions:
Preheat oven to 350
In a large mixing bowl, combine eggs, cheese, salt and cottage cheese.
Add spinach and onions to mixture
Pour into a rectangular Pyrex or baking dish and bake uncovered for 40 minutes or until lightly browned.

Serves: 20

Easy Cheesecake Dairy

I like this recipe because it can all be done in one bowl. No whipping, no extra equipment, and easy clean-up.

Prep time: 5 minutes
Bake time: 1 hour

1 lb white cheese (or 2 reg cartons of Israeli gvina levana)
4 eggs
1 c sugar
1 ready made pie crust (or make your own-see below)

Mix the eggs, sugar and cheese and pour into the pie crust
Bake for an hour
Leave in the oven for a few hours to cool

Serves: 15

Pie Crust

2 c flour
1 butter
1/3 c sugar
2-3 egg yokes

Mix all the ingredients, and bake in a greased pan about half an hour till golden brown.

-Homemade Pizza- Milchig

Prep Time: 15 minutes
Cook Time: 15 to 20 minutes

Ingredients:
1 C. warm water
1 packet of yeast
2.5 C. flour
1 tsp. sugar
1 tsp. salt
2 TBSP. oil
Oregano
Pizza Sauce
Mozarella, shreddied
Toppings of choice (optional)

Mix together water and yeast, let stand a few minutes. Add in flour, sugar, salt and oil. Add more flour if too sticky. Cover and let stand 5 minutes.
Spread on a large pizza pan sprinkled with oregano.
Add on pizza sauce, shredded mozarella, and any toppings you so desire.


Bake at 425 (preheated) for 15-20 minutes. Delicious, and SOOOOO easy and quick considering it's pizza!

(For those interested, I use 2 C regular flour, 1/2 C whole wheat...that's all the recipe can take before the whole wheat takes over and makes it too dense in my experience. I don't have time to make a dough that needs rising to use more whole wheat flour, but maybe one day when I'm a SAHM :dreaming:)

-Quesadillas- (Dairy)

Prep Time: 1 minutes
Cook Time: 5 to 10 minutes

Ingredients:
Shredded cheese (I personally like Monterey Jack + Cheddar, but you can go lots of different ways)
1 tsp or so of oil
1 flour tortilla
Salsa
Sour cream

Directions:
Put oil in your frying pan. Put a flour tortilla in the pan and place your shredded cheese on one half of the tortilla. Fold the toritilla over the cheese and keep frying until the tortilla browns.

That's the basic recipe for cheese quesadillas. It should be served with salsa and sour cream for authenticity. It also goes great next to a tomato soup or gazpacho.

Variations:

I like to add the following things to it (not necessarily all of them at the same time):

Fake bacon or baco bits
peppers (raw or sauteed)
onions (raw or sauteed)
garlic

Another delicious approach is goat cheese, corn and purple onion.

Pancakes II (Dairy)

Pancake Ingredients:
1 c. H-O basic mix*
2 eggs or 4 egg whites
1 cup milk
1 teaspoon vanilla extract or maple extract
3 tablespoons dark brown sugar

*Ingredients for H-O basic mix
1 cup oatmeal ground into a flour
1 cup whole wheat flour
2 cups white flour
1 teaspoon baking soda
2.5 teaspoons baking powder
3/4 teaspoon salt
Mix well and store.

Mix all pancake ingredients well (I use a hand blender). Coat a pan or griddle with cooking spray and fry on both sides, turning when bubbles form and 'plotz'. Add blueberries or chocolate chips (Hey, Melech, this seems to be universal :pardon:). Can also be made into waffles.

Yields: 10 small pancakes.

-Tuna Noodle Casserole- (Dairy)

Prep Time:
Cook Time: 20 minutes

Ingredients:
2 C (half of an 8 ounce bag) of medium Mueller's Old Fashioned egg noodles
1 small onion, chopped (or if you must, 2 Tablespoons of instant minced onions)
1/2 stick butter or margarine.
1/4 C flour
1/2 tsp salt
1/4 tsp ground thyme
1-1/2 C milk
1 can (6 ounce) tuna packed in water, drained
1/2 tsp Worcestershire sauce (shake well)
1/2 tsp lemon juice
Paprika (optional)

Directions:
Cook and drain noodles. Set aside for now.

In a saucepan, cook onion in butter until it is crisp and tender.

Quickly mix in flour, salt, and thyme.

Slowly add milk.

Cook while stirring constantly, until sauce boils 1 minute.

Add tuna, Worcestershire sauce, and lemon juice.

Combine with noodles in a casserole dish.

Sprinkle with paprika.

Bake at 350F uncovered, for 20 minutes.

Serves: 2

Tuna Noodle Casserole (milchigs)
Prep Time: 10 minutes
Cook Time: 30 minutes

Ingredients:
4 cans chunk light tuna, drained
3 cans condensed cream of mushroom soup
16 ounces wide egg noodles
8 ounces frozen mixed vegetables
cornflakes, crushed (optional)

Directions:
Preheat oven to 350.
Grease a 9"x13" pan.
Cook noodles according to package directions and drain.
Cook vegetables according to package directions and drain.
While the noodles and vegetables are cooking, mix the tuna and soup in a large bowl.
Add in the cooked noodles and vegetables, and mix.
Pour into pan, and top with crushed cornflakes if desired.
Bake uncovered for 30 minutes.

Serves: 8

-King Arthur's Pancakes- (Dairy)

Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients:
2 eggs
1 1/4 C/300ml milk, or half milk half buttermilk
3 Tbsp butter, melted
6 1/2 oz all purpose flour (sorry, sorry, I can't remember how much it was in cups... I THINK they used 4oz to the cup)
2 tsp baking powder
2 Tbsp sugar
1/2 tsp salt

Directions:
Whisk the eggs and milk till foamy. Whisk in the butter. Add the flour, BP, salt, and sugar and stir till nearly smooth. Heat pan, grease with butter, fry as usual. Not the most complicated recipe but can be mixed up in moments!

-Kaiserschmarrn- (Milchig)

Prep Time: 5 minutes
Cook Time: 10 minutes

Ingredients:
1 C of Milk
3 Eggs
250 g grams Flour
Pinch of Salt
Raisins
Confectioners Sugar
Sugar
1 Tbsp of Butter

Directions:
Separate the egg whites from the yolks. Thoroughly mix the yolks, sugar, milk and flour.
Whisk the egg whites, add a pinch of salt and continue whisking until stiff.
Now, carefully fold it into the egg yolk mixture.
Melt butter in a large pan, pour in the mixture and sprinkle in raisins.
Let cook on one side for a few minutes, turn over and tear into pieces with a fork (do not cut, as this will seal the edges). Now let finish cooking.

Sprinkle with confectioners sugar and serve with stewed fruit.

at first i only typed up dough, added rest at end and forgot to put in dairy..just deleted it..thanks!
