Thanks to SSSSSSHHHHHUUULLLLIIII for making the dough super-fluff. At least that was the report from the one who snuck a roll while all other members of family were fast asleep.

What was added/done for super fluffiness?
Where they water or egg challot?

Based on yesterday's chat, I was not supposed to just knead until a ball is formed. I kneaded for 10 minutes (timed on clock), added flour as needed (so while it was a 5 lb recipe, I imagine there was probably closer to 6 lbs of flour in there). I then allowed it to rise for 1 hour (again, clock watching), punched it down. Allow it to rise 1 hour, punch, and shape. Preheat oven. Shape challah, stick tray on top of pre-heating oven. Stick in oven at 350 for 20-25 minutes.

Yes. It caused for a very loooooonnnnngggg night, but my house was a disaster so I just put it back together during risings and woke up to a half normal looking one.

Wow FYI looks awesome! How long did it rise while the oven was preheating?

I turned oven on about an hour before I started baking because our oven takes a LOOONGGG time, but then the callahs were shaped and rose another half an hour before first batch was put in.
