i don't know what half those foods are...

I don't have a weekly menu, but some of my standard meals are:
Hot dogs in red sauce served over rice
Chicken wings baked in rice (w zucchini and carrot)
Schnitzel sandwiches
Occasionally baked fish and potatoes
Pasta with tomato tuna sauce
Pasta and green sauce (something i made up that my family loves: cooked onions, zucchini, green pepper, spinach and celery blended and topped with cheese)
Tuna patties

I'm also getting really bored with my standard and would like some (simple) ideas for variety...

I do Thursday - Weds. menus.
Thursday -- Mushroom Barley Beef Soup in crockpot served with French bread.
Sunday -- The chicken/broccoli/scalloped potato casserole thanks to you.
Monday -- Tuna noodle veggie casserole
Tuesday -- Spaghetti and meatballs (and rice for those non-spaghetti eaters)
Weds -- Baked ziti night
When you try to make a statement, all you're really doing is raising questions.

we usually have something to this effect:

Sun: leftovers
Mon: leftovers / chicken
Tues: Pasta / egg muffins / tuna casserole / etc
Wed: (the only real day that I cook and i try to plan in advance) usually chicken and rice / spahgetti and meatballs / tacos with beans and rice / pepper steak / etc
Thurs: Pizza / pizza pockets (bread sauce and cheese in sandwich maker)

Usually DH makes his own chicken nuggets because supper is too simple and kid-oriented.

I'm also super bored of my menus.

My regulars are: spaghetti and meatballs (I make a huge pot every once in a while and get like 8 suppers out of it), hamburgers (which I use the same meat from meatballs to make), chicken cutlets, sauteed hot dogs and veggies served over rice. Used to have steak or lamb chops once a week with home made baked fries, but I haven't made them in a while, not sure why. We just got a really nice bottle of wine from the Herzog winery in CA, so maybe I'll make it this week to pair with the wine.

Also used to serve regularly but haven't made in a while: tuna casserole and homemade pizza.

Truth is that I've been really lazy and tired lately after working late most evenings, so we've been eating take out more often that I'd like. I've been feeling guilty, and I want to start cooking more. My main issue is planning in advance and coming up with new ideas.

I find its hard for me to plan in advance because I am such a last minute person, but when I do it really makes things easier. I know what to take out of the freezer in the monring and what stuff needs to be bought on the way home. Sometimes I'll take chicken or chopped meat out of the freezer in the morning without knowing exactly what i'm doing with it later. But its a good start and i have the whole day to think and ask around for ideas and the minute I come home, its being put up. Dairy and pareve take less planning of course.

Do you have a recipe for this? I was thinking of trying a beef-barley soup to serve with bread but wanted a tried and true recipe.

Mainly based off the spice and spirit mushroom barley soup. I add beef, and don't really measure anything. I use salt, pepper, and thyme for seasoning.
Basically, throw in sliced mushrooms, throw in some barley, dump in some flanken or stew meat (whatever is cheapest), cover with water, and season. If I have carrot, I add some in too, but usually am too lazy.

I was inspired by this thread to make steak. It doesn't look as good as it tasted, which was really good. It also paired well with the new wine that we opened.

I wish that you would have come. I had like 3/4 of a steak left over that I had to throw out. :(

Throw out?!?!?! I would at the least cut it up and add it to a salad. Or slice thinly and make a sandwich.
